Vitamix recipe #3 and a crock pot dinner

Made these super yummy crock pot pork chops. I have such a hard time following a recipe. I usually just make it up as I go along.

6 frozen solid boneless pork chops
1 onion
2 sliced oranges
4 peeled and cut potatoes
Broccoli
1 cup of chicken broth
Squirt of BBQ sauce
Squirt of honey

Then cooked on low for 10 hours. It smelled delicious when I walked into the house from work! Didn't really look too pretty

I picked out all the orange slices since the skins were still on them. Added some sea salt from the grinder.

Served it over some lightly cooked asparagus... delicious! Gluten free and no worries of an accidental reaction. I really need to use the crock pot more often.

My vitamix smoothy recipe this morning was
1/4 cucumber
A few ice cubes
Half an apple
Half a pear
Two giant handfuls of spinach
Half a sandwich baggie of cantaloupe
4 Costco calorie free sugar packets
1/2 cup of juice concentrate (from the frozen juice tubes)

I was not organized enough this morning to take any pictures. It was yummy but I used too much juice. It packed too much of a flavor punch to the face. Tomorrow morning I'm going to experiment with a tiny sliver of ginger...

Vitamix recipe #2

So this morning I went to make my breakfast smoothy

2 handfuls of frozen spinach (I need to buy fresh stuff, this is a little freezer burned)
Half an apple
Half an orange
2 Tbsp of juice concentrate (that frozen tube stuff in the stores freezer section)
A handful and a half of ice
And about 3 cups of water

The Vitamix directions say to let frozen fruit thaw for 5 minutes before using. They really do mean it! My frozen orange glob didn't get blended. If I would have broken it up, I think it would have been fine.

The consistency of this smoothy has be spoiled! I can never go back to other blenders. It's like a silky sorbet texture. Usually the apple and orange would leave lots of pulp in my smoothy. Not with the Vitamix!

Vitamix recipe #1

We bought a Vitamix! I took advantage of the refurbished discount, but it was all ridiculously expensive. I got ropped in when I stopped to watch a demo at Costco. It blended things so much smoother than my Ninja...  Plus it makes ice cream? Sold!

My first recipe was a frozen plum lemonade.

1 cup of ice
3 cups of water
1 small lemon
Half a plum
5 tbsp of sugar

Blend up for about 30 seconds and is smooth! No seeds! I can drink it with a normal straw! No giant milkshake straw needed. I'm so excited to keep trying new recipes. It will be fun to experiment.
